Lemon Sesame Salmon with Broccoli & Shitake Mushrooms
Prep time: 10 mins
Cook time: 15 mins (depends on fish size)
What you need:
1 fillet of wild salmon with skin (watch out for bones! Wild salmon can sometimes have them) You can use farm raised salmon too, but it’s usually more processed/ lower quality.
1/2 cup of broccoli
¼ cup of mushrooms (I like shitake, but any kind should work!)
A LOT of fresh garlic (I use it to taste throughout this whole recipe, so It’s up to you how much you want to use!)
½ lemon
Olive oil
Sesame oil
Sesame seeds
Garlic salt
Pepper
Prepare:
Marinade the salmon while you prepare everything else (10-15 mins)
In a bowl, cover the salmon in olive oil, lemon juice, garlic salt, pepper, & fresh garlic. (*TIP*- I use a generous amount of everything because I use the leftover marinade to cook my veggies in!)
2. Chop broccoli florets to size of your liking
3. Chop mushrooms into thin slices
Cook:
In a 12 inch non-stick pan, on medium heat, cook salmon skin down. It will sit skin side down for majority of its cook time. I only like to flip my salmon at the very end to give it a little crisp on top. Cook time will will vary on size of fillet.
Once the fillet is almost cooked through, turn down heat a little, and add veggies & drizzle a little more marinade on the broccoli.(I added a little more garlic too but I’m crazy and can’t get enough lol)
Keep an eye of everything & once its done, SERVE!
Dress with some lemon juice, sesame oil, & sesame seeds to taste (or even some more garlic!!)
